On my computer, in my 2020 file under the ‘Pictures’ folder, I have a folder titled “COVID-19”*. Because one day I’m going to try to explain these things to people born in years like 2028 and 2032 and 2050 and though I hope to remember the details vividly, and will still have my journal for reference, there is a reason why they say, ‘A picture is worth a thousand words.’
*Please tell me you do, too.
But because the days of Stay-at-Home weren’t all about completely closing our doors to the outside world, I have some sub folders such as “COVID Feet”* and Quarantine Eats.
*My feet pictures are among my favorite pictures
And when I look back through these pictures, I say the things that most people seem to be thinking, “That was only back in April? It feels like three years ago.”
I’ve tried to select a few of my Quarantine Eats which came out semi-decent in picture.
I probably should explain this, it’s as simple as this: I’ve grown lazy in my picture taking. I don’t want to live life being one of those people staging a photo and missing the experience. And with food, time is temperature. So, I snag a quick photo and cross my fingers it’s not blurry or confusing.
Hubby bought this book and a meat grinder, and began grinding his own burger meat. They are insanely delicious. Like, I might never need to order a burger in a restaurant ever again*.
*But we all know I will, right?
This Ziti Stufati found in Giada’s Italy is just a pseudonym for lasagna. And yes, it was delicious.
There’s a little restaurant we stop at whenever we take Gram to Atlantic City. It’s incredibly nostalgic for us, because we would make this trip many times during the summers Lance and I dated. My go to order is their Chicken Parmesan. The chicken is pounded super thin and their homemade sauce and pasta are exceptional. Lance always orders Fisherman’s Delight, a pot full of all the best kinds of seafood. Since we couldn’t take our planned trip there in March, we made a condensed version.
If you asked me the last time I made this recipe, I would have said December. Nope. It was April*. It comes from my favorite baking book, yes baking book, of all time.

Though most of these Quarantine Eats are main meals, I promise, I did a lot of baking. These muffin tops were a quick treat to make, good for breakfast or dessert.
I discovered Saltimbocca a few years before my first trip to Italy. Then, it was all I wanted to order for a secondi* during my travels. It is veal pounded extremely thin with a piece of prosciutto and sage attached to it then lightly coated in flour and fried. Served in a light white wine sauce.
*Main dish of the meal, you know, after you’ve already filled yourself with appetizers and pasta.
I made good use of the donut molds I bought two years ago* and tried out Lillipie’s vanilla and chocolate zucchini donuts.
*And only used once or twice
As everything continues in this strange sort of stand still, I keep snapping quick photos of things to remember*, but am uncertain where to put them. I suppose I will need to start a Post Stay-at-Home folder for what is to come.
*Food, feet, and funny moments.
